Vegetable Crumble

Ingredients:
  •   1 pound vegetables

  •   1 ½ cups dried whole grain bread crumbs, wheat germ, and nut meal (combined)

  •   ½ tsp salt (optional)

  •   3 Tbsp olive oil

  •   3 clove garlic, crushed

Steps:
  1. Steam vegetables until just tender.
  2. Make a mixture of crumbs, wheat germ, and nuts, including at least some ground sunflower seeds, soy nuts, or peanuts. Ingredients can be used in any proportion but about half bread crumbs is a good measure.
  3. Season with salt if desired.
     
Heat fat in a to-inch skillet and cook garlic briefly (if included). Add crumbs and sauté quickly, stirring until crisp.
