Spinach Casserole
- 2 Tbs olive oil
- 1 Tbs butter or margarine
- 1 medium onion -- diced
- 3 large garlic cloves -- finely chopped
- 1 frozen package of spinach or fresh bunch
- Pinch of freshly ground pepper
- 4-5 Potatoes (Idaho are best for this recipe)
- 2 cups medium cheddar cheese -- shredded
- 1 Tbs sweet paprika

Ingredients:
- Boil the potatoes and mash adding a little bit of milk or butter and salt to your taste.
- In a large skillet, heat oil and butter. Add garlic and sauté until just fragrant.
- Add the frozen/fresh spinach and sauté until just wilted, but not soft. Stir in lots of fresh ground pepper.
- Spread potatoes in a lightly greased 9x12" baking dish.
- Cover with the sautéed spinach and cheddar cheese. Sprinkle with feta cheese, if you like, and then paprika.
- Bake for 20-25 minutes until the cheese are melted and the casserole has been warmed throughout.
