Spinach Casserole

  • 2 Tbs olive oil
  • 1 Tbs butter or margarine
  • 1 medium onion -- diced
  • 3 large garlic cloves -- finely chopped
  • 1 frozen package of spinach or fresh bunch
  • Pinch of freshly ground pepper
  • 4-5 Potatoes (Idaho are best for this recipe)
  • 2 cups medium cheddar cheese -- shredded
  • 1 Tbs sweet paprika
Ingredients:
  1. Boil the potatoes and mash adding a little bit of milk or butter and salt to your taste.
  2. In a large skillet, heat oil and butter. Add garlic and sauté until just fragrant.
  3. Add the frozen/fresh spinach and sauté until just wilted, but not soft. Stir in lots of fresh ground pepper.
  4. Spread potatoes in a lightly greased 9x12" baking dish.
  5. Cover with the sautéed spinach and cheddar cheese. Sprinkle with feta cheese, if you like, and then paprika.
  6. Bake for 20-25 minutes until the cheese are melted and the casserole has been warmed throughout.
