Quick and Easy Chicken Stew

  • 1 large can diced tomatoes, undrained
  • 1 large can mushroom soup
  • 1 large can chicken soup
  • 1 bag of frozen mixed veggies
  • 2 chicken breasts, cut into bite sized pieces
  • 1 c. cold water
  • salt and pepper to taste
Directions:
  1. Mix the cans of soup and the water in a pot and bring to a boil. Lower flame to simmer.
  2. Add tomatoes.
  3. Add spices and chicken and stir gently.
     
  4. Add vegetables and stir again.
     
  5. Cook on low heat until chicken is cooked (about 1 hour).

You can continue to let the soup simmer to enhance the flavor. Serve with hot garlic bread for a delicious, nutritious, winter afternoon meal.
