Miso Soup

Serves 4

Ingredients:
  • 1 3-inch piece dried wakame

  • 1 cup thinly sliced onions

  • 1 quart spring water

  • ¼ inch piece of fresh ginger, finely chopped

  • 1 ½ Tbsp miso

  • Chopped scallions and parsley

Steps:
  1. Rinse the wakame in cold water and then soak for 3 to 5 minutes.
  2. Slice it into ½ inch pieces.
  3. Put wakame, onions and ginger in a pot and add water.
  4. Bring to a boil, lower the heat and simmer for 20 minutes.
  5. Reduce the heat to very low – but not boiling or bubbling.
  6. Put miso into a heatproof bowl.
  7. Add ¼ cup of the broth to the miso and stir to completely dissolve the miso.
  8. Simmer for 3 to 5 minutes and serve.

Garnish with scallions and parsley.
