Miso Soup

Serves 4
Ingredients:

1 3-inch piece dried wakame

1 cup thinly sliced onions

1 quart spring water

¼ inch piece of fresh ginger, finely chopped

1 ½ Tbsp miso

Chopped scallions and parsley

Steps:
- Rinse the wakame in cold water and then soak for 3 to 5 minutes.
- Slice it into ½ inch pieces.
- Put wakame, onions and ginger in a pot and add water.
- Bring to a boil, lower the heat and simmer for 20 minutes.
- Reduce the heat to very low – but not boiling or bubbling.
- Put miso into a heatproof bowl.
- Add ¼ cup of the broth to the miso and stir to completely dissolve the miso.
- Simmer for 3 to 5 minutes and serve.
Garnish with scallions and parsley. |
