The Middle East countries are known for the hospitality. Many guests come and sit around for hours and nosh on delicious salads, dip warm pita in hummus or tehina and enjoy hours of conversation.
Makes 4 - 6 servings
Ingredients:

8-12 warm fresh pita

Fresh hummus
-
Spicy Eggplant
-
Tehina
-
4-6 eggs
-
Ice water
-
2 red peppers, diced
-
2 tomatoes, diced
-
4 cucumbers, diced
-
1 Tbsp olive oil
-
1 Tbsp lemon juice
-
Salt and pepper to taste

Steps:
- Boil eggs for 10 minutes and remove from heat.
- Dip the eggs in ice water, then back to hot water.
- Combine the peppers, tomatoes and cucumbers in a salad bowl.
- Dress with olive oil, lemon juice, salt and pepper.
- Place all the salads, pita and eggs in the middle of the table.
Invite people to come and eat.
