Mom's Lemon Heaven Pie

A light, lemony dessert to top off any meal!

4   eggs, separated  
½ tsp    cream of tartar  
¾ cup    sugar  
¼ cup    fresh lemon juice  
1   prepared pie crust  

Beat the egg yolks, ½ cup sugar, and lemon juice together in a double boiler pan. Set on top of boiling water and cook until thickened. In a mixer, beat the egg whites until foamy. Add the cream of tartar and continue beating on high speed until soft peaks form. Fold half of the lemon mixture into this and put into the prepared pie crust. Add ¼ cup sugar to the remaining egg whites and continue beating until the meringue is stiff.

Cover the pie with this. Bake at 300° for 15 minutes.
