 Green salad with mexicali sauce

Ingredients (per person):

Salad:

  • 1 cup cleaned, shredded lettuce

  • ¼ small red onion, peeled and thin sliced

  • ¼ cup corn kernels (fresh cooked are best, frozen thawed in second best)

  • ½ tomato, chopped

  • ¼ cup shredded cheese (Jack, cheddar, mozzarella)

  • mexicali sauce (makes 4 servings):

  • ¼ cup extra-virgin olive oil

  • 2 Tbsp cider vinegar

  • 1 clove garlic, crushed

  • ½ dried oregano

  • ¼ cup fresh cilantro, chopped

  • 1/8 tsp cumin

  • salt to taste

Steps:
  1. Assemble all the salad ingredients except the cheese on a serving plate.
  2. Combine the mexicali sauce ingredients in a jar with a lid. Shake well until combine.
  3. Pour one serving over the salad.
  4. Sprinkle cheese over the salad and serve.
