Green salad with mexicali sauce

Ingredients (per person):
Salad:

1 cup cleaned, shredded lettuce

¼ small red onion, peeled and thin sliced

¼ cup corn kernels (fresh cooked are best, frozen thawed in second best)

½ tomato, chopped

¼ cup shredded cheese (Jack, cheddar, mozzarella)

mexicali sauce (makes 4 servings):

¼ cup extra-virgin olive oil
-
2 Tbsp cider vinegar
-
1 clove garlic, crushed
-
½ dried oregano
-
¼ cup fresh cilantro, chopped
-
1/8 tsp cumin
-
salt to taste
