Avocado Salad

This is an easy to make, delicious to serve salad that brings out the best of the avocado! To make it even better, surround it with corn chips or non-salty crackers!

  •   2  ripe avocados
  •   1  Tbs  lemon juice
  •   2  tsp.  olive or canola oil
  •   1  small to medium red onion
  •   ½ tsp. ground black pepper

Instructions:

Cut each avocado in half and remove the pit. With a dull knife, cut into the avocado several times lengthwise and several more times widthwise, forming cubes. Using a spoon, scoop out the avocado from the skin. Sprinkle on the lemon juice and oil. Add the onion and black pepper and toss.

Serve.
